Ingredients

  • 6 pieces dried chilies (such as guajillo or New Mexico chilies)
  • 4 pieces garlic cloves
  • 2 pieces roasted red bell peppers
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground caraway seeds
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 4 tablespoons olive oil
  • 2 tablespoons water

Directions

Step 1

Remove the stems and seeds from the dried chilies and place them in a heatproof bowl.

Pour boiling water over the chilies and let them soak for 10 minutes until softened.

Meanwhile, peel and roughly chop the garlic cloves.
