Ingredients

  • 2 cups Semolina
  • 1 cup Granulated sugar
  • 1 cup Plain yogurt
  • 0.5 cup Shredded coconut (unsweetened)
  • 0.5 cup Vegetable oil
  • 1 tablespoon Baking powder
  • 2 tablespoons Tahini (for greasing the pan)
  • 20 pieces Almonds or blanched nuts (for decoration)
  • 1.5 cups Water (for syrup)
  • 1 cup Granulated sugar (for syrup)
  • 1 teaspoon Lemon juice
  • 1 tablespoon Rose water or orange blossom water (optional, for syrup)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Grease a baking pan (approximately 9x13 inches) with tahini to prevent sticking and add a subtle nutty flavor.

Step 3

In a large mixing bowl, combine the semolina, sugar, yogurt, shredded coconut, vegetable oil, and baking powder. Mix thoroughly until the batter is well combined and thick.

Step 4

Pour the batter into the prepared pan, spreading it evenly with a spatula.

Step 5

Using a knife, score the batter into diamond or square shapes. Place an almond or blanched nut in the center of each piece for decoration.

Step 6

Let the batter rest for 15 minutes to allow the semolina to absorb moisture.

Step 7

Bake the cake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 8

While the cake is baking, prepare the syrup. In a saucepan over medium heat, combine water and sugar. Stir until the sugar is dissolved, then bring the mixture to a gentle boil. Add the lemon juice and simmer for about 10 minutes until slightly thickened. If desired, stir in the rose water or orange blossom water for added flavor.

Step 9

Once the cake is baked, remove it from the oven and immediately pour the warm syrup evenly over the hot cake. Make sure the syrup soaks into all parts of the cake.

Step 10

Allow the cake to cool completely before cutting along the scored lines and serving.
