  • 15 ounces canned chickpeas (drained and rinsed)
  • 0.5 cups red lentils
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoon paprika
  • 0.5 cups fresh cilantro (chopped)
  • 0.5 cups fresh parsley (chopped)
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 whole lemon (cut into wedges)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Add the beef stew meat and brown on all sides, about 6-8 minutes. Remove the beef and set it aside.

In the same pot, add the chopped onion, celery, and carrot. Cook until softened, about 5-7 minutes.
