Ingredients

  • 450 grams haricots verts (thin green beans)
  • 100 grams goat cheese, crumbled
  • 50 grams slivered almonds, toasted
  • 3 tablespoons olive oil
  • 1 medium shallot, finely minced
  • 1 teaspoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the haricots verts and blanch for 2-3 minutes, or until just tender but still crisp. Drain and immediately plunge into a bowl of ice water to stop cooking. Drain again thoroughly and set aside.
