  • 2 liters water (for blanching)
  • 500 grams ice (for an ice bath)

Directions

Step 1

Fill a large pot with 2 liters of water and a generous pinch of salt. Bring it to a boil.

Trim the stem ends of the haricots verts and set aside.

Peel the shallots and slice them thinly into rings.
