Ingredients

  • 450 grams haricot vert (French green beans)
  • 6 slices bacon
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt to the water for seasoning.

Step 2

Trim the ends off the haricot vert and rinse them under cold water.

Step 3

Blanch the haricot vert in the boiling water for 2-3 minutes, until bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

Step 4

In a large skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and transfer to a paper towel-lined plate. Reserve about 2 tablespoons of the bacon grease in the skillet.
