Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, chopped
  • 3 medium potatoes, peeled and diced
  • 1 pound ground beef or sausage
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 6 cups beef or chicken broth
  • 2 whole bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups spinach or kale, chopped
  • 0.5 cups parmesan cheese, grated (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes, or until the onion becomes translucent and fragrant.

Step 3

Add the ground beef or sausage to the pot. Cook, breaking it apart with a spoon, until browned and fully cooked through. Drain any excess fat if needed.

Step 4

Add the carrots, celery, and potatoes to the pot. Stir and sauté for another 5 minutes to release their flavors.

Step 5

Pour in the can of diced tomatoes with its juices and the broth. Stir to combine.

Step 6

Add the bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 25 minutes, or until the potatoes and carrots are tender.

Step 7

Stir in the chopped spinach or kale and cook for another 5 minutes, just until wilted.

Step 8

Taste the soup and adjust the seasoning with additional salt and pepper as needed.

Step 9

Ladle the hot soup into bowls. If desired, top with a sprinkle of grated Parmesan cheese for extra depth of flavor.

Step 10

Serve immediately with a slice of crusty bread or crackers, and enjoy!
