  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp sesame seeds
  • 2 scallions, thinly sliced
  • 4 cups cooked white rice
  • 0.25 cup water
  • 1 tbsp cornstarch (for sauce thickening)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces. Set aside.

Step 2

In a bowl, whisk the egg. Add the chicken pieces and toss to coat.

Step 3

Place 0.5 cups of cornstarch on a plate. Remove the chicken pieces from the egg mixture and dredge each piece in the cornstarch, ensuring it is well coated. Shake off excess.

In a large skillet or wok, heat 1 cup of vegetable oil over medium-high heat. Fry the chicken in small batches until golden and crispy on all sides (about 5-6 minutes per batch). Remove and drain on a paper towel-lined plate.
