Ingredients

  • 2 pieces Large apples (e.g., Fuji, Honeycrisp, or Gala)
  • 0.5 cup Rolled oats
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Chopped walnuts or pecans (optional)
  • 2 tablespoons Raisins or dried cranberries
  • 1 tablespoon Unsalted butter
  • 2 teaspoons Honey or maple syrup (for drizzling)
  • 0.25 cup Water
  • 0.5 cup Greek yogurt or vanilla yogurt (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the apples thoroughly, then slice off the tops and set them aside. Use a spoon or melon baller to carefully hollow out the cores, leaving about 1/2 inch of apple at the bottom to create a cavity for the filling.

Step 3

In a small bowl, combine the rolled oats, brown sugar, ground cinnamon, chopped nuts (if using), and raisins or dried cranberries.

Step 4

Divide the oat mixture evenly between the two apples, stuffing it into the hollowed cavities.

Step 5

Place a small piece of unsalted butter (about 1/2 tablespoon) on top of the filling in each apple.

Step 6

Place the stuffed apples in a small baking dish. Add 1/4 cup of water to the bottom of the dish to help steam the apples as they bake.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, uncover and bake for an additional 5 minutes to lightly brown the tops.

Step 8

Remove the apples from the oven and let them cool slightly. Drizzle with honey or maple syrup for added sweetness.

Step 9

Serve warm with a dollop of Greek yogurt or vanilla yogurt on the side, if desired.
