Ingredients

  • 1.5 cups Black beans (cooked or canned, rinsed and drained)
  • 3 large Eggs
  • 0.25 cup Cocoa powder (unsweetened)
  • 0.5 cup Old-fashioned oats
  • 0.5 cup Honey or maple syrup
  • 2 tablespoons Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Sea salt
  • 0.25 cup Semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

Step 2

Place the black beans, eggs, cocoa powder, oats, honey (or maple syrup), coconut oil, vanilla extract, baking powder, and sea salt in a blender or food processor.

Step 3

Blend or process the mixture until it is completely smooth, ensuring there are no chunks of black beans remaining. Scrape down the sides as needed.

Step 4

If desired, fold in the chocolate chips for an extra burst of sweetness and texture.

Step 5

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 6

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

Step 7

Remove from the oven and allow the brownies to cool completely in the pan before cutting to ensure they hold their shape.

Step 8

Cut into 9 squares and enjoy! Store leftovers in an airtight container in the fridge for up to 5 days.
