Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups elbow macaroni (or small pasta shells)
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup whole milk
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon butter, melted (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with the melted butter and set aside.

Step 2

Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet over medium-high heat, cook the ground beef until browned, about 6-8 minutes. Break up the meat with a spatula as it cooks. Drain any excess grease.

Step 4

Add the diced onion and minced garlic to the skillet with the cooked ground beef. Cook for an additional 2-3 minutes, until the onion is softened and fragrant.

Step 5

In a large bowl, mix together the cream of mushroom soup, cream of chicken soup, and whole milk until smooth.

Step 6

Stir the cooked pasta, ground beef mixture, frozen mixed vegetables, salt, black pepper, and Italian seasoning into the soup mixture. Mix thoroughly to combine.

Step 7

Transfer the mixture to the prepared casserole dish, spreading it out evenly.

Step 8

Sprinkle the shredded cheddar cheese evenly over the top of the mixture.

Step 9

Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 10

Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly, and the dish is heated through.

Step 11

Allow the casserole to cool for 5 minutes before serving. Enjoy!
