Ingredients

  • 1 medium English cucumber
  • 220 grams Cream cheese
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Fresh dill, finely chopped
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Kosher salt
  • 0.25 teaspoon Freshly ground black pepper
  • 12 slices White sandwich bread

Directions

Step 1

Wash the cucumber thoroughly and use a mandoline or sharp knife to slice it into very thin rounds. Lay the slices on a paper towel, sprinkle lightly with salt, and let them sit for 5 minutes to draw out excess moisture. Pat them dry with another paper towel.

Step 2

In a mixing bowl, combine the cream cheese, butter, dill, lemon juice, salt, and pepper. Use a hand mixer or spatula to blend the mixture until smooth and spreadable.

Step 3

Lay the slices of white sandwich bread on a flat surface. Spread a thin, even layer of the cream cheese mixture on one side of each slice of bread.

Step 4

Arrange the cucumber slices in a slightly overlapping layer on half of the bread slices. Be sure to cover the entire surface of the bread with cucumber.

Step 5

Top the cucumber-layered bread slices with the remaining bread slices, cream cheese side down, to form sandwiches.

Step 6

Using a sharp knife, carefully trim off the crusts of each sandwich. Cut each sandwich into 4 neat, even rectangles or triangles, depending on your preference.

Step 7

Serve the cucumber tea sandwiches immediately, or refrigerate them in an airtight container for up to 4 hours. Serve chilled or at room temperature.
