Ingredients

  • 1 lb ground beef (80% lean, 20% fat)
  • 2 medium jalapeño peppers, finely chopped
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cheddar cheese slices
  • 4 hamburger buns
  • 2 tbsp butter, melted
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 2 tbsp sriracha or hot sauce (optional)

Directions

Step 1

In a large mixing bowl, combine the ground beef, jalapeño peppers, white onion, garlic, chipotle chili powder, smoked paprika, Worcestershire sauce, salt, and black pepper. Mix gently with your hands until all ingredients are evenly distributed, being careful not to overmix.

Step 2

Divide the mixture into 4 equal portions and shape each portion into a patty about ¾-inch thick. Use your thumb to create a small indent in the center of each patty to prevent puffing up during cooking.

Step 3

Preheat a grill, grill pan, or skillet over medium-high heat. Lightly oil the grates or pan to prevent sticking.

Step 4

Place the patties on the grill or pan and cook for 4-5 minutes on the first side, then flip. Add a slice of cheddar cheese to each patty and continue cooking for another 4-5 minutes, or until the patties reach your desired level of doneness (160°F for medium).

Step 5

While the patties cook, brush the hamburger buns with melted butter and toast them on the grill or in a separate skillet until golden brown, about 1-2 minutes.

Step 6

Assemble the burgers: Place a lettuce leaf on the bottom half of each bun, followed by the cooked patty with melted cheese. Top with a tomato slice and a drizzle of sriracha or hot sauce, if desired. Finish with the top half of the bun.

Step 7

Serve immediately with sides of your choice, such as fries or a crisp green salad.
