Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 14.5 ounces canned diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1.5 cups macaroni noodles
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup Parmesan cheese (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it into crumbles as it cooks. Drain any excess fat.

Step 2

Transfer the cooked ground beef to the crock pot.

Step 3

Add the chopped onion, diced carrots, diced celery, and minced garlic to the crock pot.

Step 4

Pour in the beef broth and canned diced tomatoes (with juices).

Step 5

Stir in the tomato paste, dried oregano, dried basil, salt, and pepper.

Step 6

Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the vegetables are tender.

Step 7

During the last 30 minutes of cooking, add the macaroni noodles to the crock pot and stir well. Ensure they are fully submerged in the liquid to cook evenly.

Step 8

Check the soup after 30 minutes to ensure the noodles are tender. Adjust the seasoning with additional salt and pepper if needed.

Step 9

Ladle the soup into bowls and top with Parmesan cheese and chopped parsley, if desired.

Step 10

Serve warm and enjoy!
