Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrot, diced
  • 2 stalks celery stalks, diced
  • 15 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned white beans, drained and rinsed
  • 6 cups beef broth
  • 1 cup elbow macaroni
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.25 cup parmesan cheese, grated (for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat if necessary.

Step 3

Add the diced onion, garlic, carrot, and celery to the pot. Cook for 5 minutes or until the vegetables are softened, stirring occasionally.

Step 4

Pour in the beef broth, canned diced tomatoes (with their juices), kidney beans, and white beans. Stir to combine.

Step 5

Add the dried oregano, dried basil, paprika, salt, and black pepper. Bring the soup to a boil, then reduce the heat to a simmer and cook for 20 minutes, allowing the flavors to meld.

Step 6

Stir in the elbow macaroni and cook for an additional 8-10 minutes, or until the pasta is tender.

Step 7

Taste the soup and adjust seasoning if necessary. Remove from heat.

Step 8

Ladle the soup into bowls and garnish with grated parmesan cheese and chopped fresh parsley if desired.

Step 9

Serve hot and enjoy!
