  • 0.75 cup Pearl barley
  • 14.5 oz Diced tomatoes (canned)
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Bay leaf
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Heat a skillet over medium heat and brown the ground beef, breaking it into crumbles. Drain excess fat if needed.

Step 2

While the beef is browning, dice the onion, slice the carrots into rounds, and chop the celery into bite-sized pieces. Mince the garlic.

Transfer the browned ground beef to the crock pot.
