  • 4 medium Potatoes
  • 1 large Yellow onion

  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 3 tbsp Butter
  • 3 tbsp All-purpose flour
  • 2 cups Milk
  • 2 cups Sharp cheddar cheese, shredded
  • 2 tbsp Parsley (optional, for garnish)
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with non-stick cooking spray.

Step 2

Peel the potatoes and slice them into thin, even rounds (about 1/8 inch thick). Set aside.

Step 3

Dice the onion and mince the garlic. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes). Drain any excess grease.

Step 4

Stir in the diced onion, minced garlic, salt, pepper, and paprika, and cook for an additional 3-4 minutes until the onions are softened. Remove the skillet from heat and set aside.

In a medium saucepan, melt the butter over medium heat and whisk in the flour to form a smooth paste. Cook for 1-2 minutes, stirring constantly.

Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.

Return the casserole to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and the potatoes are tender when pierced with a fork.

Step 10

Remove the casserole from the oven and let it rest for 5-10 minutes before serving. Sprinkle with chopped parsley, if desired.
