Ingredients

  • 1 cup Brown lentils
  • 1 cup Small elbow pasta

  • 2 cups Tomatoes (diced or crushed)
  • 2 tablespoons Tomato paste
  • 4 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Red chili flakes (optional, for spice)
  • 2 tablespoons White vinegar
  • 0.25 cup Vegetable oil (for frying and cooking)
  • 2 large Onions (thinly sliced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse and soak the brown lentils for 20 minutes. Drain and transfer the lentils to a pot. Cover with water and bring to a boil. Reduce heat and simmer for 20-25 minutes or until tender but not mushy. Drain and set aside.

Step 2

In a separate pot, cook the white rice. Rinse the rice until the water runs clear. Combine 1 cup of rice with 1.5 cups of water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside.

Cook the pasta according to package instructions. Drain and toss with a teaspoon of vegetable oil to prevent sticking. Set aside.

Stir in the white vinegar and remove from heat.

To assemble the kusherie, layer the cooked rice, lentils, pasta, and chickpeas on individual plates or in a serving dish. Top with the tomato sauce and a generous sprinkle of crispy fried onions.
