Ingredients

  • 8 pounds Bone-in cooked ham
  • 1 cup Brown sugar
  • 0.5 cup Bourbon
  • 0.25 cup Honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 0.5 teaspoon Ground cloves
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 325°F (165°C) and position a rack in the lower third of the oven.

Step 2

Remove the ham from its packaging and place it flat side down in a large roasting pan. Using a sharp knife, score the surface of the ham in a diamond pattern, cutting about 1/4 inch deep.

Step 3

Cover the ham tightly with aluminum foil and bake in the preheated oven for about 90 minutes to heat through.

Step 4

Meanwhile, prepare the bourbon glaze: In a medium saucepan over medium heat, combine the brown sugar, bourbon, honey, Dijon mustard, apple cider vinegar, ground cloves, and unsalted butter.

Step 5

Stir the mixture until the sugar is dissolved and the ingredients are fully combined. Bring it to a gentle simmer and cook for 5–7 minutes, or until slightly thickened. Remove from heat and set aside.

Step 6

After 90 minutes of baking, remove the ham from the oven and carefully discard the aluminum foil. Brush a generous amount of the bourbon glaze over the surface of the ham.

Step 7

Return the ham to the oven, uncovered, and bake for an additional 45–60 minutes, basting with the glaze every 15 minutes for a rich, caramelized coating.

Step 8

Once the ham reaches an internal temperature of 140°F (60°C) and the glaze is thick and glossy, remove it from the oven and let it rest for 10–15 minutes before carving.

Step 9

Slice the ham and serve warm, drizzling additional glaze over the slices if desired.
