Ingredients

  • 2 cups Cooked ham (diced)
  • 3 cups Cannellini beans (cooked, drained, and rinsed)
  • 4 cups Collard greens (stems removed and roughly chopped)
  • 1 medium Yellow onion (diced)
  • 2 medium Carrots (peeled and diced)
  • 2 Celery stalks (diced)
  • 3 cloves Garlic (minced)
  • 6 cups Low-sodium chicken broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 1 teaspoon Salt (adjust to taste)
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Heat olive oil in a skillet over medium heat. Add diced onion, carrots, and celery. Sauté for 5-6 minutes until softened and slightly golden.

Add minced garlic to the skillet and cook for 1 minute, until fragrant. Remove from heat.

In a large crock pot, add the sautéed vegetables, diced ham, cannellini beans, and chopped collard greens.
