Ingredients

  • 1 large Ham bone (with some meat attached)
  • 1 medium Onion
  • 2 medium Carrots
  • 2 Celery stalks
  • 2 Garlic cloves
  • 1 Bay leaf
  • 2 Fresh thyme sprigs (or 1 teaspoon dried thyme)
  • 1 teaspoon Whole black peppercorns
  • 5 Parsley stems
  • 10 cups Water

Directions

Step 1

Place the ham bone in a large stockpot.

Step 2

Peel the onion and cut it into quarters. Add to the pot.

Step 3

Wash the carrots and celery. Roughly chop them into large pieces and add them to the pot.

Step 4

Peel and lightly smash the garlic cloves. Add them to the pot.

Step 5

Add the bay leaf, thyme, peppercorns, and parsley stems to the pot.

Step 6

Pour in 10 cups of cold water, or enough to fully cover the ham bone and vegetables.

Step 7

Bring the pot to a boil over medium-high heat.

Once boiling, reduce the heat to low and simmer uncovered for approximately 3 hours. Skim off any foam or impurities that rise to the surface during cooking.

After 3 hours, carefully remove the ham bone and large vegetable pieces using tongs or a slotted spoon. Let them cool slightly before discarding or saving any leftover ham meat for another dish.

Strain the stock through a fine-mesh sieve or cheesecloth into a large bowl or container to remove any remaining solids.

Allow the stock to cool to room temperature, then refrigerate. Once chilled, skim off any fat that solidifies on the surface if desired.

Use the ham stock immediately, or store it in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 3 months.
