  • 2 stalks celery stalks
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken or vegetable broth
  • 1 15-ounce can diced tomatoes
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt

Stir in the frozen peas and season the stew with salt and black pepper. Cook for an additional 5 minutes.

Step 8

Remove the bay leaf and discard it.

Step 9

Serve the ham stew hot with crusty bread or over rice for a hearty meal.
