Preheat a panini press or grill pan on medium-high heat.
Slice the ciabatta rolls in half horizontally and spread 1 tablespoon of Dijon mustard on the inside of each roll.
Layer 2 slices of Manchego cheese and 2 slices of ham on each roll. Close the sandwiches gently.
Spread 1 tablespoon of butter evenly on the outside of each roll, covering both the top and bottom surfaces.
