Ingredients

  • 4 medium-sized Russet potatoes
  • 1 cup (diced) Cooked ham
  • 1 small (diced) Yellow onion
  • 1 medium-sized (diced) Bell pepper
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Garlic powder
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup (optional, shredded) Cheddar cheese
  • 2 tablespoons (optional, chopped) Fresh parsley

Directions

Step 1

Peel and grate the potatoes using a box grater. Rinse the grated potatoes under cold water to remove excess starch, then squeeze them dry using a clean kitchen towel or paper towels.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Step 3

Add the diced onion and bell pepper to the skillet. Sauté for 3-4 minutes or until softened. Remove from the skillet and set aside.
