Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 0.25 cup all-purpose flour
  • 4 cups chicken broth
  • 2 medium russet potatoes, peeled and diced
  • 2 cups frozen corn kernels
  • 2 cups cooked ham, diced
  • 1 cup heavy cream
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

Melt the butter in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and translucent.

Step 3

Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.

Step 4

Sprinkle the flour over the cooked vegetables. Stir well to coat the vegetables evenly, and cook for 1-2 minutes to eliminate the raw flour taste.

Step 5

Gradually pour in the chicken broth while stirring constantly to prevent lumps from forming.

Step 6

Add the diced potatoes to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 10-12 minutes, or until the potatoes are tender.

Step 7

Stir in the frozen corn, diced ham, heavy cream, dried thyme, salt, and black pepper.

Step 8

Simmer the chowder for an additional 10 minutes, stirring occasionally, until the flavors meld together and the chowder thickens slightly.

Step 9

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Ladle the chowder into bowls, garnish with chopped fresh parsley, and serve immediately.
