Ingredients

  • 3 cups cooked white rice
  • 3 cups broccoli florets (fresh or frozen)
  • 2 cups diced cooked ham
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 0.5 cups milk
  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoons black pepper
  • 0 teaspoons salt (optional, to taste)
  • 1 as needed non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with non-stick cooking spray.

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened and translucent.

Step 3

If using fresh broccoli florets, steam them in a pot of boiling water for 3-4 minutes until bright green and tender-crisp. If using frozen broccoli, thaw and drain thoroughly.

In a large mixing bowl, combine the cooked rice, steamed broccoli, diced ham, cooked onions, cream of mushroom soup, milk, garlic powder, black pepper, and 1 1/2 cups of shredded cheddar cheese. Mix well until evenly coated.
