Peel the russet potatoes and thinly slice them into rounds approximately 1/8 inch thick. Set aside.
Dice the cooked ham into bite-sized cubes. Dice the yellow onion and finely mince the garlic cloves.
In a medium saucepan, melt the unsalted butter over medium heat. Stir in the all-purpose flour and cook for 1-2 minutes, whisking constantly to form a roux.
Gradually whisk in the whole milk and chicken broth, stirring continuously to prevent lumps. Bring the mixture to a low simmer and cook until slightly thickened, about 5 minutes.
Stir in 1.5 cups of the shredded cheddar cheese, the minced garlic, kosher salt, and black pepper. Stir until the cheese is melted and the sauce is smooth. Remove from heat.

Once cooked, garnish with chopped fresh parsley before serving.
