Ingredients

  • 3 medium russet potatoes
  • 1 cup, diced cooked ham

  • 1 large egg

  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup sour cream
  • 1 tablespoon prepared horseradish
  • 1 teaspoon lemon juice
  • 1 tablespoon, chopped (optional) fresh parsley

Directions

Step 1

Peel the potatoes and cut them into chunks.

Step 2

Place the potatoes in a large pot, cover with water, and bring to a boil. Cook for 12-15 minutes, or until tender. Drain and mash the potatoes in a large mixing bowl.
