Ingredients

  • 450 grams Cheese tortellini
  • 3 tablespoons Unsalted butter
  • 3 Garlic cloves, minced
  • 250 grams Cremini mushrooms, sliced
  • 200 grams Cooked ham, diced
  • 1.5 cups Heavy cream
  • 1 cup Freshly grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Olive oil (for sautéing)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Reserve 1/4 cup of pasta water, then drain the cooked tortellini and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the sliced cremini mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they release their moisture and become golden brown.

Stir in the diced cooked ham and cook for 2 minutes to warm through. Transfer the mushroom and ham mixture to a plate and set aside.
