Ingredients

  • 2 large caps Portobello mushrooms
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 250 grams Ground beef
  • 0.5 teaspoons Garlic powder
  • 0.25 teaspoons Paprika
  • 2 slices Thinly sliced ham
  • 75 grams Button mushrooms
  • 1 tablespoon Butter
  • 1 slice Cheddar cheese
  • 2 leaves Lettuce leaves
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Mustard

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the portobello mushroom caps with a damp paper towel and remove the stems. Brush both sides of the caps with 1 tablespoon of olive oil and season with half the salt and pepper. Place them on a baking sheet, gill side up, and bake for 12-15 minutes or until tender. Pat them dry with a paper towel to remove excess moisture after baking.

Step 3

In a mixing bowl, combine the ground beef with garlic powder, paprika, and the remaining salt and pepper. Mix until well-combined and form into a patty slightly larger than the portobello mushroom caps.

Step 4

Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Cook the beef patty for 4-5 minutes per side or until cooked to your desired doneness. In the final minute of cooking, place the slice of cheddar cheese on top of the patty and cover with a lid to melt.

Step 5

In a separate pan, melt the butter over medium heat. Add the button mushrooms and sauté until golden brown and tender, about 5 minutes. Set aside.

Step 6

Quickly heat the slices of ham in the same skillet used for the mushrooms, just until warmed through, about 1 minute.

Step 7

Assemble the burger: Place one baked portobello mushroom cap gill side up as the base. Layer with the lettuce leaf, mayonnaise, and mustard. Follow with the cooked beef patty with melted cheese, sautéed mushrooms, and ham slices. Top with the second portobello mushroom cap, gill side down.
