Ingredients

  • 1 pound Dried Great Northern beans
  • 1 pound Ham bone or diced ham
  • 1 medium Onion, chopped
  • 2 large Carrots, diced
  • 2 medium Celery stalks, diced
  • 3 cloves Garlic, minced
  • 1 Bay leaf
  • 8 cups Water or chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Rinse the dried Great Northern beans under cold water and sort through to remove any debris. If desired, soak the beans in a large bowl of water overnight, then drain and rinse before using.

Step 2

Place the ham bone or diced ham in the bottom of the crock pot.

Step 3

Add the rinsed beans, chopped onion, diced carrots, diced celery, and minced garlic to the crock pot.

Step 4

Place the bay leaf on top of the ingredients, then pour in the water or chicken broth to cover everything.

Step 5

Season the soup with salt and ground black pepper. Keep in mind that the ham may already be salty, so adjust salt to taste later if needed.

Step 6

Cover the crock pot with its lid and cook on low for 8-10 hours, or on high for 4-6 hours, until the beans are tender and the flavors are well blended.

Step 7

Once cooking is complete, remove the ham bone (if using), and discard any excess fat or gristle. Shred the meat from the bone and return it to the crock pot.

Step 8

Stir the soup well, taste, and adjust seasoning as needed. Remove and discard the bay leaf.

Step 9

Ladle the soup into bowls, garnish with fresh chopped parsley if desired, and serve warm.
