Preheat a large skillet or griddle over medium heat.
Lay one flour tortilla flat on a clean surface and evenly distribute 50g of smoked ham over half of the tortilla.
Add 37.5g of Gouda cheese on top of the ham, spreading it evenly. Sprinkle with a few pieces of chopped green onions if desired.
Fold the tortilla in half, pressing gently to seal. Repeat with the remaining tortillas and filling ingredients.
Melt 1 tablespoon of butter in the heated skillet. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining butter and quesadillas.
Allow the quesadillas to cool slightly, then slice each one into four wedges.
