Ingredients

  • 1 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Egg
  • 0.5 cup Whole milk
  • 2 tablespoons Unsalted butter, melted
  • 0.5 cup Cooked ham, finely chopped
  • 2 tablespoons Fresh chives, finely chopped
  • 0.25 cup Cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or butter.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 3

In a separate medium bowl, beat the egg. Whisk in the milk and melted butter until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to ensure tender muffins.

Step 5

Gently fold in the chopped ham, chives, and shredded cheddar cheese until evenly distributed throughout the batter.

Step 6

Using a small spoon or cookie scoop, evenly divide the batter among the prepared mini muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature as a delightful appetizer for any occasion.
