Ingredients

  • 2 cups cooked ham
  • 3 cups cooked stuffing
  • 2 cups mashed potatoes
  • 1.5 cups shredded cheddar cheese
  • 1.5 cups gravy
  • 0.5 cup sour cream
  • 2 large eggs
  • 1 cup frozen peas or mixed vegetables (optional)
  • 0.5 cup buttered breadcrumbs
  • 1 tablespoon unsalted butter
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with unsalted butter or non-stick spray.

Step 2

In a large mixing bowl, whisk together the eggs, sour cream, and 1/2 cup of the gravy until smooth. Stir in the salt and pepper.

Step 3

Fold in the cooked ham, stuffing, mashed potatoes, and frozen peas or mixed vegetables (if using) into the gravy mixture. Mix well to combine.

Step 4

Transfer the mixture into the prepared casserole dish and smooth the top with a spatula.

Step 5

Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

Step 6

In a small bowl, toss the buttered breadcrumbs with the melted butter. Sprinkle the breadcrumbs over the cheese layer for a crispy topping.

Step 7

Cover the casserole loosely with aluminum foil and bake in the preheated oven for 20 minutes.

Step 8

Remove the foil and continue baking for another 15 minutes, or until the topping is golden brown and the casserole is bubbling at the edges.

Step 9

Let the casserole cool for 5–10 minutes before serving. Garnish with dried parsley if desired.

Step 10

Serve warm and enjoy your delicious Thanksgiving leftovers casserole!
