Ingredients

  • 1.5 cups Arborio rice
  • 4 cups Chicken stock
  • 2 tablespoons Butter
  • 1 medium Yellow onion, finely chopped
  • 0.5 cups Parmesan cheese, grated
  • 0.5 cups Diced ham
  • 4 ounces Mozzarella cheese, cut into 1/2-inch cubes
  • 0.5 cups All-purpose flour
  • 3 Eggs, beaten
  • 1.5 cups Breadcrumbs
  • 4 cups Vegetable oil, for frying
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

In a medium saucepan, heat the chicken stock over medium heat and keep it warm.

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.

Add the Arborio rice to the skillet and stir to coat it in the butter. Toast the rice for 2-3 minutes until lightly golden.
