Ingredients

  • 250 grams Halloumi cheese
  • 1 large Mango
  • 120 grams Mixed greens
  • 150 grams Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh mint leaves

Directions

Step 1

Cut the halloumi cheese into 1cm-thick slices.

Step 2

Heat a non-stick grill pan over medium heat and add 1 tablespoon of olive oil. Grill the halloumi slices for 2 minutes on each side or until golden brown. Remove from heat and set aside.

Step 3

Peel and dice the mango into bite-sized pieces.

Step 4

Slice the cherry tomatoes in half, and dice the cucumber into small cubes.

Step 5

Thinly slice the red onion into half-moons.

Step 6

Wash and pat dry the mixed greens, then place them in a large salad bowl.

Step 7

Add the mango, cherry tomatoes, cucumber, and red onion to the mixed greens.

Step 8

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lime juice, honey, salt, and black pepper to create the dressing.

Drizzle the dressing over the salad and toss gently to combine.
