Ingredients

  • 4 pieces (6 ounces each) Halibut fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, finely minced
  • 1 clove Garlic, minced
  • 0.5 cup Dry white wine
  • 1 cup Heavy cream
  • 1 Vanilla bean, split and seeds scraped
  • 0.25 teaspoon Saffron threads
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

Step 3

In a large, oven-safe skillet, heat the olive oil over medium-high heat. Sear the halibut fillets for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork. Remove from the oven and set aside, loosely covered with foil to keep warm.
