Ingredients

  • 4 pieces Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 2 cups Corn kernels (fresh or frozen)
  • 1 teaspoon Lime zest
  • 2 tablespoons Lime juice
  • 2 tablespoons Cilantro, chopped
  • 2 stalks Green onions, sliced

Directions

Step 1

Season the halibut fillets with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the halibut fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the halibut from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil.

Step 4

Add the minced garlic to the skillet and sauté for 30 seconds, or until fragrant.

Step 5

Stir in the corn kernels and cook for 4-5 minutes, stirring occasionally, until the corn becomes tender and lightly caramelized.

Step 6

While the corn cooks, make the lime cilantro butter by combining the unsalted butter, lime zest, lime juice, and cilantro in a small bowl. Mix until well combined.

Step 7

Return the cooked halibut fillets to the skillet, placing them on top of the corn mixture. Spoon the lime cilantro butter over the fillets, allowing it to melt and coat both the fish and the corn.

Step 8

Garnish the dish with sliced green onions and additional chopped cilantro, if desired. Serve immediately.
