Ingredients

  • 4 pieces Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Garlic cloves, minced
  • 2 pieces Chipotle peppers in adobo sauce
  • 1 cup Heavy cream
  • 0.25 cup Chicken or vegetable stock
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Pat the halibut fillets dry with paper towels. Season both sides with salt, black pepper, and paprika.

Step 2

Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.

Step 3

Once the butter has melted, place the halibut fillets in the skillet. Sear each side for 3-4 minutes, or until golden brown and cooked through. Remove the fillets from the skillet and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium and add the remaining tablespoon of butter.

Add minced garlic and sauté for 30 seconds, or until fragrant.
