Ingredients

  • 4 pieces (6 ounces each) Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 1 medium (thinly sliced) Fennel bulb
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 tablespoons (chopped) Fresh parsley
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 4 cups Arugula

Directions

Step 1

Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Place the halibut fillets in the skillet and cook for 3-4 minutes per side, until the fish is golden brown and flakes easily with a fork. Remove from the pan and set aside.
