Ingredients

  • 200 grams Granulated sugar
  • 120 grams Unsalted butter
  • 120 ml Light corn syrup
  • 240 ml Heavy cream
  • 1 teaspoon Sea salt
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Optional flaky sea salt for garnish

Directions

Step 1

Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment paper with butter.

Step 2

In a heavy-bottomed medium saucepan, combine the sugar, unsalted butter, light corn syrup, and heavy cream. Place the pan over medium heat.

Step 3

Stir regularly with a wooden spoon or heat-resistant spatula as the mixture melts and begins to combine.

Step 4

Attach a candy thermometer to the side of the saucepan, ensuring the tip does not touch the bottom. Cook while stirring occasionally, allowing the mixture to reach 245°F (118°C). This ensures the caramels will have a soft, chewy texture.

Step 5

Once the mixture reaches the target temperature, immediately remove the saucepan from the heat.

Step 6

Stir in sea salt and vanilla extract quickly but gently, ensuring they are fully incorporated.

Step 7

Carefully pour the hot caramel mixture into the prepared baking pan, spreading it evenly.

Step 8

Let the caramel cool at room temperature for about 2–3 hours until fully set and firm.

Step 9

Using the parchment overhang, lift the caramel slab from the pan. Use a sharp knife or oiled scissors to cut the caramel into small squares or rectangles.

Step 10

If desired, sprinkle flaky sea salt on top of the cut caramels for an extra touch of flavor.

Step 11

Wrap individual caramel pieces in wax paper or cellophane, twisting the ends to seal. Store in an airtight container at room temperature for up to two weeks.
