Ingredients

  • 500 g Fresh broad beans (shelled)
  • 150 g Jamón Serrano or Prosciutto
  • 3 tbsp Olive oil
  • 2 large Garlic cloves
  • 1 small Spring onion (optional)
  • 2 tbsp Fresh parsley
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper

Directions

Step 1

1. Prepare the broad beans by shelling them. If using older, larger beans, blanch them in boiling water for 2-3 minutes, then cool and remove the outer skin to reveal the tender green bean inside.

Step 2

2. Dice the Jamón Serrano or prosciutto into small bite-sized pieces.

Step 3

3. Finely chop the garlic cloves and optionally slice a spring onion if using.

Step 4

4. Heat the olive oil in a large skillet or frying pan over medium heat.

Step 5

5. Add the chopped garlic (and spring onion, if using) to the pan and sauté gently for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 6

6. Stir in the diced Jamón Serrano/Prosciutto and cook for 3-4 minutes until it starts to release its flavors and become slightly crisp around the edges.

Step 7

7. Add the shelled broad beans to the pan and mix well to coat them in the flavorful oil and ham.

Step 8

8. Season with salt and ground black pepper, keeping in mind that the ham is quite salty, so taste as you go.

Step 9

9. Lower the heat, cover the pan with a lid, and let the beans cook gently for 10-12 minutes, stirring occasionally, until they are tender.

Step 10

10. Once the beans are cooked, sprinkle with fresh parsley and give everything a final stir.

Step 11

11. Serve warm as a side dish or as a tapa with crusty bread.
