Directions

Step 1

Bring a large pot of salted water to a rolling boil. Add the lobsters and cook for 8-9 minutes until bright red. Immediately transfer them to an ice bath to cool.

Once the lobsters are cool enough to handle, crack the shells and extract the meat from the claws, knuckles, and tails. Set the meat aside and reserve the shells for optional stock use (not necessary for this recipe).
