Ingredients

  • 2 cups Romaine lettuce
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper

  • 1.5 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 1 cup Canned chickpeas, drained and rinsed
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Fresh dill, chopped
  • 0.5 cup Feta cheese, crumbled
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon Red wine vinegar
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Paprika

Directions

Step 1

Wash and dry all the fresh vegetables and herbs.

Step 2

Chop or tear the Romaine lettuce into bite-sized pieces and place them into a large salad bowl.

Dice the red and yellow bell peppers into small chunks. Slice the cucumber into thin half-moons, and halve the cherry tomatoes. Add these to the bowl.
