Ingredients

  • 4 cups yellow squash
  • 1 medium yellow onion
  • 3 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups Ritz crackers (or similar butter crackers)
  • 0.5 cup parmesan cheese
  • 2 tablespoons unsalted butter (melted for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with butter or nonstick spray.

Step 2

Wash the yellow squash and slice it into 1/4-inch rounds. Dice the onion into small pieces.

Step 3

Heat 3 tablespoons of unsalted butter in a large skillet over medium heat. Add the sliced squash and diced onion. Sauté for about 10 minutes, stirring frequently, until the squash softens and the onion becomes translucent. Remove from the heat and set aside to cool slightly.

Step 4

In a large mixing bowl, whisk together the sour cream, eggs, garlic powder, salt, and black pepper until smooth and well combined.

Step 5

Stir the sautéed squash and onions into the sour cream mixture. Add 1 cup of shredded cheddar cheese and mix well.

Step 6

Pour the mixture into the greased casserole dish, spreading it out evenly.

Step 7

In a small bowl, crush the Ritz crackers into small crumbs. Stir in the grated parmesan cheese and melted butter until well coated.

Step 8

Sprinkle the cracker topping evenly over the squash mixture.

Step 9

Bake the casserole in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is bubbly along the edges.

Step 10

Remove from the oven and let the casserole cool for 5-10 minutes before serving. Enjoy your homemade Gwen's Original Squash Casserole!
