Peel and slice the potatoes into thin, even rounds (about 1/4-inch thick). Set them aside in a bowl of cold water to prevent browning.
In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
