Ingredients

  • 2 heads Romaine lettuce
  • 0.5 cup Extra-virgin olive oil
  • 3 cloves Garlic cloves
  • 4 pieces Anchovy fillets
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Lemon juice
  • 2 teaspoons Worcestershire sauce
  • 2 pieces Egg yolks
  • 0.5 cup Parmesan cheese, freshly grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 piece Baguette
  • 2 tablespoons Butter, melted
  • 0.25 cup Parmesan cheese, for garnish

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash and pat dry the romaine lettuce. Tear the leaves into bite-sized pieces and set aside in a large salad bowl.

Step 3

Slice the baguette into 1-inch cubes. Toss the cubes with the melted butter on a baking sheet and bake for 8–10 minutes or until golden and crisp, turning once halfway through. Remove and set aside to cool.

Step 4

In a food processor or blender, combine the garlic cloves and anchovy fillets. Pulse until finely minced.

Step 5

Add the Dijon mustard, lemon juice, Worcestershire sauce, and egg yolks to the processor. Blend until smooth.

Step 6

With the processor running, slowly drizzle in the olive oil and process until the dressing is thick and emulsified.

Step 7

Transfer the dressing to a bowl and stir in the grated Parmesan cheese, salt, and ground black pepper. Taste and adjust seasoning as needed.

Step 8

To assemble the salad, toss the romaine lettuce with the prepared dressing until evenly coated.

Step 9

Add the croutons and toss gently to combine.

Step 10

Sprinkle with extra Parmesan cheese for garnish and serve immediately.
