Ingredients

  • 4 cups Cooked white rice
  • 2 cups BBQ pork (chopped or shredded)

  • 3 Eggs
  • 4 Garlic cloves (minced)
  • 1 Small onion (diced)
  • 1.5 cups Frozen peas and carrots (thawed)
  • 3 tablespoons Soy sauce
  • 3 tablespoons BBQ sauce
  • 4 Green onions (sliced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Step 2

Crack the eggs into the skillet and scramble them until just set. Remove the scrambled eggs from the skillet and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the skillet. Sauté the diced onion and minced garlic until fragrant, about 2-3 minutes.
