Ingredients

  • 3 pounds pork spare ribs
  • 1 cup dark brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper
  • 2 tablespoons yellow mustard
  • 0.25 cup apple cider vinegar
  • 1 cup your favorite BBQ sauce
  • 2 tablespoons honey

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Remove the membrane from the back of the ribs by sliding a knife under it and pulling it off with a paper towel for grip.

Step 3

In a small bowl, mix together the dry rub ingredients: dark brown sugar, paprika, garlic powder, onion powder, chili powder, ground cumin, kosher salt, black pepper, and cayenne pepper.

Step 4

Pat the ribs dry with a paper towel, then rub them generously with yellow mustard to act as a binder for the spices.

Step 5

Rub the dry spice mixture all over both sides of the ribs, making sure they are fully coated.

Step 6

Wrap the ribs tightly with aluminum foil, creating a sealed packet.

Step 7

Place the foil-wrapped ribs on a baking sheet and bake for 3 hours in the preheated oven.

Step 8

While the ribs bake, prepare the glaze by mixing the apple cider vinegar, BBQ sauce, and honey in a small saucepan over low heat. Simmer for 5 minutes to combine flavors, then remove from heat.

Step 9

After 3 hours, carefully remove the ribs from the oven and unwrap them, taking care as steam may escape.

Step 10

Brush the ribs generously with the prepared BBQ glaze on both sides.

Step 11

Increase the oven temperature to 425°F (220°C).

Step 12

Place the ribs back on the baking sheet (uncovered this time) and roast for 10-15 minutes, until the glaze is caramelized and sticky.

Step 13

Remove the ribs from the oven and let them rest for 5 minutes before slicing into individual portions.

Step 14

Serve hot with extra BBQ sauce on the side and enjoy!
