Ingredients

  • 900 g fresh green beans, trimmed
  • 3 tbsp unsalted butter
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 230 g button mushrooms, finely chopped
  • 3 tbsp all-purpose flour
  • 480 ml chicken or vegetable broth
  • 240 ml heavy cream
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 150 g fried onions (store-bought or homemade)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch for 5 minutes. Drain and immediately transfer them to a bowl of ice water to stop the cooking. Drain again and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3 minutes.

Add the mushrooms to the skillet and cook until they release their moisture and brown slightly, about 5–7 minutes.

Sprinkle the flour over the mushroom mixture and stir well to coat, cooking the flour for 1 minute.

Gradually pour in the broth, whisking constantly to avoid lumps. Simmer for 3–4 minutes until the mixture thickens.

Reduce the heat to low and stir in the heavy cream, soy sauce, salt, and black pepper. Cook for another 2–3 minutes until the sauce is rich and creamy. Remove from heat.

In a large mixing bowl, combine the blanched green beans with the mushroom sauce, tossing to coat evenly.

Transfer the mixture to a greased 9x13-inch (23x33 cm) baking dish, spreading it out in an even layer.
